5v * 2.5A = 12.5 Watts?
  That must be SOME camera.

You want a small switching power supply for that.

A linear is going to use 12V @ 2.5A , with 12-5v * 2.5A = 17.5 Watts
going to waste as heat in the regulator (assuming the camera really uses
all of that 2.5A) Now it's using something more reasonable, say 5V @ 100mA
then you only burn 0.7W in the regulator, something a 7805 can handle.

If you do need the current, look into the TI PT series converters.
Something like a PT78HT205H or PT6302 module.
See the Mouser.com catalog and look for 'module 5V' by Texas Instruments.
It's possible, Bantam in town may carry them. I've never seen them at Frys.
The old Power Company junk had several of them in the main units, if you've
still got some of that laying about.
