How do you know when you are ready? How do you test it?

I installed Exim, mySQL, and some PERL modules on a SuSE box today. Am I
ready to do graylisting yet?

We currently have our mail hosted outside. When I am confident that
graylisting is set up properly, I will have the domain moved. Does
anyone have any other suggestions?
