I've figured out my postgrey problems thanks to the instructions here:

http://wiki.nctu.edu.tw/index.php/Postgrey

I was mistakingly sending arguments to make with the -D flag. I also 
wasn't using this argument with building postgrey itself.

I'm getting greylisting-related log entires now... =)
