If your mailclient is Outlook, there's a nice plugin at
www.olspamcop.org (soon-to-be-known as www.spamgrabber.org)

It plugs in to Outlook and can even forward the entire thing
headers, body, and all, to a definable email account.
Originally I think it was intended to be used to inform
places like spamcop.
